What Makes Our Costa Rica Cascara “Premium Grade?”
The coffee that contributes to this lot was specifically picked to become cascara. After the coffee was harvested, the cherry skins were washed, pasteurized, and dehydrated in a sterile facility to food-grade standards, keeping them free of pathogens, debris, and other undesirable substances commonly found in “regular” cascara.
Prepare as a hot brew by adding (10 grams) 4 heaping tablespoons of tea to (300 ml) 10 oz hot water for 6-10 minutes. Or, as a cold brew, add (20 grams) 8 heaping tablespoons of tea to (600 ml) 21 oz cold water and refrigerate for 24 hours. Delicious as an iced tea or hot beverage, the surprise is that it tastes delicious, but nothing like coffee.
